In terms of recently released, you can start off by watching the next season of a couple of shows you have a high rating for (Demon Slayer, Mob Psycho, Made in Abyss, Vinland Saga, etc. Though I did keep note that you have some of these in your Plan to Watch.)

I've gotta second the recommendation for Demon Slayer. That's definitely a great recent one, excellent animation and music work on it. Another one you could check out if you're looking for something more chill and relaxed would be Tsurune, which I recommend highly but might not be for everyone. Definitely a nice and relaxing show.

I recently came back to watching anime after a break of about two years myself, and Demon Slayer was just what I needed to dive back in. Made it hard to put down the laptop when I had to do other things lol.
