After rewatching the Monogatari Series again I can't help but wonder whether Shaft would continue adapting the light novels Nisio Isin is putting out?

For example are there updates on adaptations such as Monster Season or Off Season?

In a nutshell, https://myanimelist.net/anime/50346/Yofukashi_no_Uta was directed by https://myanimelist.net/people/15639/Tomoyuki_Itamura who is the person really doing the work on the Monogatari franchise. The real question should be thus: Now that Shaft broke apart, which Studio can and will pick up the pieces to make sure we get more seasons?

I have indeed heard of a few key people leaving Shaft and creating anime like Kaguya-Sama: Love is War (which also explains the Monogatari reference season 2 has) but Shaft has still made a promotional video for Monogatari last year https://myanimelist.net/anime/51068/Manga_Bakemonogatari_Shaft_Seisaku_Tokubetsu_PV showing that they still can recreate the Monogatari aesthetic (this time following the art style of the manga). Shaft is also creating a new Madoka Magica movie https://myanimelist.net/anime/48820/Mahou_Shoujo_Madoka%E2%98%85Magica_Movie_4__Walpurgis_no_Kaiten which they probably couldn't do if their company really broke apart. 

Although besides that it is interesting to think of which other company could tackle the Monogatari Series. Former Shaft employees would have to surely be on board as well as the producer Aniplex as they would have to give permission for the creation of new seasons in the first place. As the interest stack you've linked shows, former Shaft employees have gone to quite a lot of different studios.

There is no official status of Shaft, the Japanese entertainment industry is notorious for their ability to hide business politics from us unwashed consumers. So this is my private conspiracy theory, take with a graind of salt.

It all started in 2016 with https://myanimelist.net/anime/33455/Kakushigoto_PV which was a promo made by Shaft, who had animated a lot of work originally created by https://myanimelist.net/people/2662/Kouji_Kumeta such as SZS, ef: and Hidamari Sketch. But then https://myanimelist.net/anime/40716/Kakushigoto wasn't made by Shaft, much to my surprise. Around that time it became semi-official how a number of key and founding members have left. Starting with https://myanimelist.net/anime/40550/Assault_Lily__Bouquet a lot of bad shows for gatcha games and other safe bets came out, maybe with https://myanimelist.net/anime/40752/Bishounen_Tanteidan as the last attempt to make "artistic" shows. In my book, much was cash cow projects now to stay afloat.

Then post-Shaft works in Shaft style popped up, such as Call of the Night and Kaguya-sama, made by former senior Shaft staffers. From what I hear the part of Shaft still doing relatively well is Shaft Digital, who simply master the technological side of animation using computers. They can always make shows for gatcha & other products, or even advertising. And they probably can also produce a short promo video for the MOnogatari manga. But what they lost is the ability for complex shows with scripts, sophisticated key animation and so on.
